Lalvin Narbonne 71B-1122 5g. Rapid starts, high alcohol tolerance (14%). The original, steady, low foamer, excellent for barrel fermentation, with constant and complete fermentation between 15° and 30°C (59° and 86°F), that has the ability to metabolize high amounts (20% to 40%) of malic acid. Besides producing a smoother, rounder, more aromatic wine that tends to mature quickly, it doesn't extract a great deal of phenols from the must, so maturation time is further reduced.
